It can be used for dumplings, spring rolls, summer rolls, wontons, seaweed chips, even vegan bacon. But there’s a new trend baking on TikTok that has us intrigued. Say hello to the Rice Paper Croissant.

What started as a clever workaround for the gluten-free gourmands among us has turned into a TikTok trend that is gaining traction. Clocking over 1.7M views, @misojenkitchen takes layers of rice paper – the kind you’d use for fresh spring rolls – and dips them in a sweet egg mixture similar to French toast batter, cutting and rolling into a crescent shape and then baking until golden, puffy and crispy.

When considering the difference between the rice paper version vs the more traditional, gluten-filled one, Chef Benoit Cornet, croissant chef for Ballerina Farm says, "Croissants are really difficult to make by hand—they are layers upon layers. It is a game of temperature and texture to roll the dough and butter evenly to create the flakes." But what about the rice paper version? Would he try it? His short (and hilariously French) answer. “No. Rice paper doesn’t have any gluten. That isn’t a croissant.”

No matter which side you're on, we can (hopefully) all agree that croissants trending on the Internet is never a bad thing.
