Say cheese! (Or...fromage?) It’s peak raclette season and we’re dipping in.

What's raclette you may ask? Originally a Swiss staple, raclette, a semi-hard cheese made from pasteurized cow’s milk, got its name from the French word for scraping (literally, racler) melted cheese onto bread straight from the fire.

Fast forward a few centuries and it’s now a wintertime essential. From November to April, the French and Swiss live for this cheesy goodness. So much so that you'll find most households breaking out the electric raclette grill when the time is right. Americans might have popularized gooey fondue in the 1970s, but raclette is all about that melt.

The main raclette hubs? Savoie and Franche-Comté. But you’ll also find decadent versions everywhere from Switzerland to Québec.
